HOW TO USE:

• Prepare Your Work Area: Ensure you have a clean, stable cutting surface and access to water for rinsing.
• Position the Fish: Place the fish firmly on the cutting surface, ideally with its belly facing you.
• Make the Initial Cut: Starting behind the gill plate, make a cut down to the backbone. Do not cut through the backbone.
• Cut Along the Backbone: Turn the blade flat and gently guide it along the backbone, extending the cut towards the tail. Use the knife’s flexibility to follow the contours of the fish’s bones closely.
• Remove the Fillet: Continue the cut until the entire fillet is separated from one side of the fish. Repeat the process for the other side.
• Skin the Fillet (Optional): Place the fillet skin-side down. Starting from the tail end, make a small cut to separate a piece of skin from the meat. Hold the skin firmly and angle the knife slightly downwards, sliding the blade between the skin and the meat until the skin is fully removed.
• Clean and Store: Rinse the knife and fillet thoroughly after use. Store the knife safely in its ABS sheath.
